Directions
1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan or line it with parchment paper.
2. In a large mixing bowl, combine the spice cake mix and pumpkin puree. Stir until well blended; the batter will be thick.
3. Spread the batter evenly into the prepared loaf pan.
4. Bake for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
5. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Variations & Tips
For a bit of crunch, you can stir in half a cup of chopped walnuts or pecans into the batter. If you like raisins or dried cranberries, a handful of those adds a nice, chewy texture. To make the bread a bit more festive for holidays, sprinkle a handful of chocolate chips on top before baking. For a slightly richer flavor, you can add a teaspoon of vanilla extract. And if you want to give it a bit more spice, feel free to add a dash of cinnamon, nutmeg, or cloves to the batter.
