Whipped these up for a snack, but they vanished so fast, I didn’t even get a bite!

Directions
1. In a large mixing bowl, combine the softened cream cheese and drained crushed pineapple. Mix until well blended.
2. Add in the shredded cheddar cheese, green bell pepper, green onions, parsley, garlic powder, salt, and black pepper. Stir until all ingredients are evenly incorporated.
3. Shape the mixture into a ball. You can use plastic wrap to help form a smooth ball.
4. Spread the chopped pecans on a plate or a flat surface. Roll the cheese ball in the pecans until it is completely coated.
5. Wrap the cheese ball in plastic wrap and refrigerate for at least 2 hours, or until firm.
6. Before serving, let the cheese ball sit at room temperature for about 15 minutes to soften slightly for easier spreading.
Variations & Tips
For a different flavor profile, try using different types of cheese such as Colby Jack or even a spicy pepper jack. You can also add a hint of sweetness by incorporating dried cranberries or raisins into the mixture. If you prefer a nut-free option, roll the cheese ball in shredded coconut or finely chopped herbs instead of pecans. To make it even more festive, consider shaping the cheese ball into a fun, seasonal design.
