Separate the egg whites from the yolks and set aside in separate containers.
Add the butter and sugar to a container and mix well.

Tip: The butter should be at room temperature to work it better.
Then, add the previously reserved egg yolks to the butter and sugar mixture and beat to continue preparing the fluffy cake.
Next, add half of the flour and half of the milk mentioned above. Beat until everything is incorporated.
Tip: First, mix the flour with the baking powder.
After everything has been incorporated, add the rest of the milk and flour and the vanilla essence to the mixture. Mix until you obtain a soft and homogeneous cake batter.
Finally, beat the egg whites until stiff and add them to the final mixture. The egg whites are beaten at the end so that they are quickly integrated into the mixture and give the cake that fluffy texture. They should not be beaten first and set aside because they tend to lose volume and this would affect the cake.
Finally, add the mixture to a previously floured baking pan, tap it a few times to release the air or make bubbles appear, and bake at approximately 180ºC, depending on your oven, for 40 minutes or until a toothpick inserted into the cake comes out completely dry. Then, let the vanilla cake rest for about 15 minutes and proceed to unmold it. You can fill the soft and spongy cake with whatever you like, such as chocolate, strawberry jam… It is a delicious cake to accompany your cravings.
