Directions
1. Line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
2. In a medium saucepan, combine the white chocolate chips and sweetened condensed milk over low heat. Stir continuously until the chips are fully melted and the mixture is smooth.
3. Remove the saucepan from heat and stir in the chopped dried cherries, vanilla extract, and a pinch of salt until well combined.
4. Pour the mixture into the prepared baking pan, spreading it out evenly with a spatula.
5. Allow the fudge to cool at room temperature for about 2 hours, then transfer it to the refrigerator to chill for at least 1 hour or until fully set.
6. Once the fudge is set, use the parchment paper to lift it out of the pan and onto a cutting board. Cut into 24 small squares.
Variations & Tips
For those who aren’t fans of cherries, you can substitute dried cranberries, apricots, or raisins. If you’re looking to add a bit of crunch, try mixing in some chopped nuts like pistachios or almonds. For a more festive appearance, sprinkle the top of the fudge with colored sugar or edible glitter before it sets. To cater to different taste buds, you can also experiment with dark or milk chocolate chips instead of white chocolate.
