Mix the icing sugar & warer together until you form a spreadable paste, like a peanut butter texture.
Cream the butter & sugar until light & fluffy, add 1 egg at a time & incorporate after each 1. Add the vanilla essence & mix. Add the flour & mix by hand until a soft dough is formed. Divide the dough into 12 parts each weighing 50g each. Line a baking tray with baking paper. Roll the 12 parts into balls & place onto the baking tray well apart. Bake for 15 mins on 170°C. Remove from the oven & allow to cool. Spread equal amounts of icing on 6½ of the snowballs & Sandwich it with the other 6 ½ of the snowballs. Creating 6 fully snowballs. Dip each 1 into the syrup for 6 secs until its well coated with the syrup, then roll each 1 in the coconut
