Only two ingredients and it tastes this good? No way!
Directions
1. Preheat your oven to 375°F (190°C).
2. Lightly grease a baking sheet with cooking spray.
3. Fill a large shallow bowl with warm water. Dip one rice paper sheet into the water for about 10-15 seconds, until it becomes pliable.
4. Lay the softened rice paper on a clean surface. Spoon about 2 tablespoons of peach pie filling onto the center of the rice paper.
5. Fold the sides of the rice paper over the filling, then roll tightly from the bottom to form a roll. Repeat with the remaining rice paper sheets and peach pie filling.
6. Place the rolls seam-side down on the prepared baking sheet.
7. Lightly spray the tops of the rolls with cooking spray.
8. Bake in the preheated oven for 15-20 minutes, or until the rolls are golden and crispy.
9. Allow to cool slightly before serving.
Variations & Tips
For a twist, try using different pie fillings such as apple or cherry. You can also sprinkle a little cinnamon or nutmeg on top before baking for an extra flavor boost. If you want a savory version, swap out the pie filling for a savory filling like mushroom and spinach. Just be sure to adjust the baking time accordingly.
