Press the meatloaf mixture into the prepared baking dish, forming an even layer.
Bake the meatloaf in the preheated oven for 25-30 minutes, or until it is cooked through and no longer pink in the center. Remove from the oven and let it rest for a few minutes.
While the meatloaf is resting, spread the mashed potatoes evenly over the top of the meatloaf.
Sprinkle the shredded cheddar cheese, crumbled bacon, and sliced green onions (if using) over the mashed potatoes.
Return the casserole to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
Once done, remove the casserole from the oven and let it cool slightly before serving.
Cut into squares and serve hot. You can garnish with additional green onions, if desired.
