2. On a lightly floured surface, divide the pizza dough into two halves. Roll out each half into four slices. Transfer 2 slices of dough to each prepared baking tray.
3. For the classic pizza calzones, spread half of each circle of dough with pizza sauce, leaving a border around the edges. Sprinkle mozzarella cheese over the sauce, then add pepperoni slices and black olives. Fold the dough over the toppings to cover them completely. Press the edges firmly with your hands or a fork to seal. Make a few small holes on top of the dough with a knife to vent steam.
4. For the broccoli and cheddar calzone, brush olive oil over all circles of dough and sprinkle with Italian seasoning.
5. In a medium bowl, mix the chopped broccoli with the cheddar and mozzarella cheese.
6. Spoon the broccoli cheese mixture onto half of each pizza circle, ensuring even distribution. Fold the dough over the filling to create a pocket. Press the edges firmly to seal and make a few holes on top for steam to escape.
7. Bake for 25-30 minutes, rotating the trays halfway through, until the crust is golden brown. Remove from the oven and let the calzones cool slightly before cutting and serving.
