Guess what happened? My neighbor made this incredible dish, and I was like, « Share the recipe, please! » And now, it’s a total sensation everywhere I take it

Ingredients:
4 cups chilled mashed potatoes
5 strips of bacon
2 thoroughly beaten eggs
1/2 teaspoon onion powder
1/2 teaspoon ground pepper
1/2 teaspoon salt
1/2 cup grated cheddar cheese (optional)
Instructions:
1. In a large skillet, cook bacon over medium high heat until brown. Set aside to crumble but leave bacon drippings in pan.
2. In a large bowl, mix 4 cups chilled mashed potatoes, 5 cooked and crumbled bacon strips, 1/2 tsp onion powder, 1/2 tsp salt, and 1/2 tsp black pepper. Add 2 beaten eggs to the mixture and combine well. This mixture can make 6-8 patties depending on your preference on size. Divide mixture into your desired patty amount.
3. Put as many patties into existing skillet as you’d like over medium high heat.
4. Cook the pancakes for about 3-4 minutes on each side until golden brown and crispy.
5. Optional: Sprinkle shredded cheddar cheese on the hot pancakes and allow it to melt.
6. Transfer the cooked pancakes to a serving plate.
