1 onion (120g/4.2 oz)
4 carrots (200g/7 oz)
6 potatoes (700g/1.5 lbs)
Salt and black pepper (to taste)
3 cloves of garlic
A bunch of parsley
Instructions:
Season chicken thighs with salt, black pepper, and oregano.
Heat olive oil and butter in a pan, sear chicken until golden.
In a bowl, mix honey, sweet chili sauce, soy sauce, lemon juice, and Dijon mustard. Pour over chicken.
Bake at 350°F (175°C) for 25-30 mins.
🍽️ Serve with roasted veggies:
Toss onion, carrots, and potatoes with olive oil, salt, black pepper, garlic, and parsley.
Roast at 400°F (200°C) for 25-30 mins.
