Directions:
Preheat oven to 400°F (200°C). Wash potatoes and pierce them with a fork. Bake for 1 hour or until tender.
While potatoes are baking, toss shrimp with Cajun seasoning. Heat olive oil in a pan over medium heat and cook shrimp until pink and cooked through, about 2-3 minutes per side.
Once potatoes are done, cut a slit in each and scoop out the insides into a bowl, leaving a thin shell.
Mash the potato insides with sour cream, milk, salt, and pepper. Stir in half of the cheddar cheese and half of the green onions.
Fill the potato shells with the mashed potato mixture, top with cooked shrimp, and sprinkle with the remaining cheddar cheese.
Return to the oven and bake for another 15 minutes or until the cheese is melted and bubbly.
Garnish with remaining green onions before serving.
